Banana, Pineapple and Strawberry Ice Lollies

 

  1. To enhance the taste of a fruit ice lolly, remove it from the ice lolly mould and leave it on a plate or in a dish (photo above) a few minutes prior to eating. It makes the ice lolly slightly softer to eat and the fruit flavour is more apparent when the ice lolly is eaten at a slightly warmer temperature.

  2. When frozen, the ice lollies can be removed from the ice lolly moulds by running them under a warm tap or by holding them in a container with warm water.

  3. Small freezer containers with lids can be used to freeze the fruit puree in.

  4. To achieve a more 'classy' or 'professional' look for the fruit ice lollies, ice lolly moulds which use wooden lolly sticks can be purchased.

  5. If a fruit puree tastes a little bland, try adding some juice from an orange or other citrus fruit. It can help to rectify and sharpen the taste.

  6. Ice lollies can be tweaked by changing the ratio of the fruit to alter the flavour and colour.

  7. If you do not own a blender follow the instructions for the Dapple ice lolly, it simply requires a fork to mash the fruit.

  8. Use tinned pineapple in natural fruit juice to save time.

  9. Local greengrocers are great for buying fruit by weight which enables you to buy small quantities of fruit at a time.

  10. Let the children know that the ice lollies will take a long time to freeze so they are prepared to be patient.

 

If our children were slightly off their food due to a cold (not ill or had been sick) they would happily eat a fruit ice lolly so at least they were eating something nutritious. The ice lollies also came in handy when we'd been out, and the children were tired and ready to eat. By giving the children an ice lolly, they were happy, and it kept their hunger at bay a little longer. It gave me time to prepare something nutritious to eat rather than grabbing something less healthy.

Remember not to over fill the ice lolly moulds or freezer containers right to the top. The ice lolly handles, or the container lids could be forced off as the water in the fruit puree expands slightly once frozen.

The length of time for the purees to be completely frozen depends on the size of ice lollies you are making, and the freezer used. Generally, small ice lollies will be ready to eat at teatime if they were made early morning. Ice lollies made at night are ready for eating the next day. Once thawed, do not refreeze the fruit purees.

Two Colour Pouring Technique Using Recipe 49

Making a batch of Tandem ice lollies is quick and easy way to make more exciting ice lollies for the children by using contrasting colours/flavours in one ice lolly. The rectangles below represent 6 ice lolly moulds, with a side view, filled with the yellow fruit puree (1) at the bottom and red fruit puree (2) at the top.

Method

  1. Blend the prepared mango and pineapple together to make a yellow fruit puree
  2. Use half of the yellow fruit puree to half fill the ice lolly moulds (1)
  3. Add all the strawberries to the remaining yellow fruit puree and blend
  4. Pour the red fruit puree (2) on top of the yellow puree
  5. Add the ice lolly handles
  6. Freeze

The three colour pouring technique can be used to make three different Tandem ice lollies in one batch enabling you to offer a choice of three different ice lollies with little extra time involved when making them.
