Pineapple Ice Lollies

This pineapple ice lolly recipe is the one I used most often when our children were small because they were the easiest and quickest to make. The quantity of the pineapple is down to personal preference.

If the banana is not ripe enough when blended with pineapple, there seems to be a reaction which affects the colour. An unripe fruit can spoil an otherwise tasty ice lolly. If you are unsure how to check the ripeness of the fruit then the quick fruit guide will help. 

 

Ingredients
1 ripe banana
2 pineapple rings (or fresh pineapple equivalent)

Method

  1. Blend the prepared banana and pineapple together to make a fruit puree
  2. Pour the fruit puree into the ice lolly moulds
  3. Add the ice lolly handles
  4. Freeze

You might want to double the quantity of fruit in the ice lolly recipe to make more ice lollies.

Pineapple ice lollies are the easiest and quickest to make when using tinned pineapple for convenience. They were very popular with our children when they were small and the ice lollies I made most frequently because so little time and effort was required to make them. The ice lollies can be tweaked by adding more pineapple to create a stronger tropical flavour.

Strawberries can be added to the pineapple ice lolly recipe to make them more colourful as demonstrated on the homepage using recipe 49. The Splatter ice lollies are made with banana, pineapple and strawberries and the Dapple ice lollies and Gentle Shade ice lollies both show examples of ice lollies made with both mango and banana.

 

Fresh Fruit Ice Lollies

Ingredients
1 ripe mango
2 oranges

Method

  1. Wash and prepare the fruit
  2. Blend mango flesh, orange juice and orange pulp from the orange to make a fruit puree
  3. Pour the fruit puree into the ice lolly moulds
  4. Place the ice lolly handles in position
  5. Freeze

 

Blackberry Ice Lollies

I thought I would make the most of the blackberry season by making some Blackberry Ice Lollies. This ice lolly recipe is slightly different than the other ones as there is some cooking involved. The blackberries are cooked first and then strained through a sieve to remove all the seeds.

Ingredients
500g or less blackberries
Juice from 1 orange
1 banana

Method

  • Wash the blackberries and cook them in the microwave with a little water until they are soft
  • Put the blackberries through a sieve using the back of a spoon to remove all the seeds
  • Leave the blackberry juice to cool down completely.

  • Blend the cold blackberry juice with the juice of one orange and one banana
  • Pour the fruit puree into the ice lolly moulds
  • Place the ice lolly handles in position
  • Add the ice lolly handles
  • Freeze

These ice lollies have a refreshing, tart taste. Please be aware that the drips from the ice lollies will stain due to the blackberries used in the recipe.
